Preparation time- 25 minutes + 30 minutes refrigeration.
Ingredients
750 grams green apples
1/3 cup sugar
Half teaspoon ground cloves
2 teaspoons lemon juice
1 cup plain flour
1 cup self raising flour
1/2 teaspoon ground cinnamon
150 grams butter
1/2 cup Caster sugar
One teaspoon vanilla essence
1 egg lightly beaten
1 tablespoon milk
1 tablespoon caster sugar extra
1 teaspoon ground cinnamon extra
Directions
1.Brush a 20 × 30 cm (8 ×12 Inch) shallow tin with oil. Line the base with paper and grease the paper. Preheat the oven to 180°C (350°F/Gas 4) .Peal, core and slice the apples and put in a pan with the sugar, cloves and juice. Star stir over heat to warm.Cover and simmer, stirring often, for 20 minutes or until soft. Remove from the heat, drain and cool.
2. Sift the flours with the extra cloves and cinnamon. Beat the butter and sugar until light and creamy. Add the vanilla and egg and beat thoroughly. Fold in the flour in batches, mixing after each addition. If the mixture is too dry, add a little milk.knead ge ntly on a lightly floured surface until smooth. Divide in half, cover with plastic rap and chill for 30 minutes.
3. Roll out one portion of pastry to fit the tin base. Spread with apple filling. Place the second pastry sheet on top of the filling and press down gently.
4. Brush the top with milk and sprinkle with the extra sugar and cinnamon. Bake for 30 minutes or until golden brown. Leave for 15 minutes, then turn onto a wire rack to cool.
