Sweet chilli octopus

Ingredients
- 1.5kg (3lb) baby octopus
- 1cup (250 ml/8 fl oz) sweet chilli sauce
- 1/3 Cup ( 80 ml/2 3/4 fl oz) fish sauce
- 1/3 Cup ( 60g/2 oz) soft brown sugar
- Lime wedges, to serve
Method by
- Cut off the octopus heads, below the eyes, with a sharp knife . Discard the heads and guts. Push the beaks out with your index finger, remove and discard. Wash the octopus thoroughly under running water and drain on crumpled paper towels. If the octopus tentacles are large, cut into quarters.
- Mix together the sweet chilli sauce, lime juice, fish sauce and sugar.
- Cook the octopus on a very hot, lightly oiled barbecue grill flat plate, turning often, for 3-4 minutes, or until it just changes color. Brush with a quarter of the sauce during cooking. Do not overcook the octopus or it will toughen. Serve immediately with the remaining sauce and lime wedges. Nutrition per serve
