 CARAMELISED ONION AND POTATO SALAD

Preparation time: 22 minutes 

  • Total cooking time: 1 hour
  •  Serves 9 to 10


Ingredients

  • Oil for cooking salad 
  • 7 red onions, thinly sliced
  •  1 kg baby potatoes, unpeeled
  • Five rashers bacon.
  • rind removed 2/4 cup fresh chives, snipped .
  • One cup mayonnaise.

  • 1 tablespoon Dijon mustard.
  •  juice of 1 small lemon .
  • 3 tablespoons sour cream.
Instructions 

  • Heat 2 tsp of oil in a frying pan, add the onion and cook over medium-low heat for 40 minutes over medium heat.

  • Cut all the potatoes into large chunks.Put them in boiling water for 10 minutes, drain the extra water and let them cool down.
  • Grill the bacon until crisp, drain it  on paper towels and cool slightly before coarsely chopping.

  • Put  the ingredients (potato, onion and chives) in a large bowl, keep few chives aside for a garnishing and mix it well.


  • Put the mayonnaise, mustard, lemon juice and sour cream in a bowl and whisk together. Pour over the salad and toss to coat. Sprinkle with the bacon and garnish with the  chives.
