FILLET STEAK WITH FLAVOURED BUTTERS

Ingredients
4 fillet steaks
CAPSICUM BUTTER
- One small red capsicum
- 126 butter
- 3 tsp fresh oregano ( chopped)
GARLIC BUTTER
- 126 g butter
- Four cloves of garlic ( crushed )
- Two spring onions (finely chopped )
Method ( instructions)
1 Cut a pocket in each steak.
2 For the capsicum butter, cut the capsicum into large pieces and place, skin-side-up, under a hot grill until the skin blisters and blackens. Put in a plastic bag until cool. Peel away the skin and dice the flesh. Whip ( beat) the butter until smooth. Add the capsicum and herbs, season and beat until smooth.
3 For the garlic butter, whip the butter until smooth and fluffy until creamy, add the onion and crushed garlic.whip it until smooth.
4 Fill capsicum butter into the pockets in three of the steaks and garlic butter into the other two.
5 Grill in flat plate for 4-5 minutes each side, turning once. Brush frequently with butter while cooking to avoid burning.
