 CHICKEN BURGERS WITH TARRAGON MAYONNAISE

Total cooking time: 15 minutes

 Serves 6

Ingredients for burger patty 

 Chicken mince - 1 kg

Lemon juice - 1 tsp

 small onion - 1 (finely chopped) 

Breadcrumbs - 1 cup 

Sour cream - 2 Tbsp

6 onion bread rolls

Tarragon Mayonnaise Ingredients 

Olive oil - 1 cup 

 Tarragon Vinegar - 1 tbsp

French mustard - 1/2 tbsp 

Egg yolk - 1

Steps 

  • To make burger patty mix all burger patty ingredients ( Chicken mince,Lemon juice, small onion,sour cream, bread crumbs, ) together in big glass bowl. Mash well and divide it into 6 portions.( Round flat shape)
  • For mayonnaise pour egg yolk into a big bowl. Add half of vinegar and the mustard into it. Whisk them together for two minutes or until fluffy and creamy. Add 1 tbsp oil while whisking for good results or to balance extra thickness. Stop whisking when it reaches on required consistency. Season with salt and and white pepper.
  • constantly until the mixture thickens. Increase the flow of oil to a thin stream and continue whisking until it has all been incorporated. Stir in the remaining vinegar and season well with salt and white pepper.

  •  Cook the burgers Patty on a hot, lightly oiled barbecue flat plate or grill for 7 minutes each side, turning once. Serve on a roll with the mayonnaise.
