CHEESEBURGER WITH CAPSICUM SALSA

Ingredients
- 1 kg beef mince
- 1 small onion, finely chopped
- Two tablespoons parsley (chopped )
- 1 teaspoon dry oregano seasoning
- 1 tablespoon tomato paste
- 70 g Cheddar cheese
- 6 bread rolls
CAPSICUM SALSA
- 2 red capsicums
- 1 red tomato, finely chopped
- 1 small red onion ( chopped)
- 1 tablespoon olive oil
- 2 teaspoons red wine vinegar
Method
1 Mix together the mince, onion, herbs and tomato paste with your hands. Divide into six portions and shape into patties. Cut the cheese into small six squares. Make a cavity in the top of each patty with your thumb. Place a piece of cheese in the cavity and smooth the mince over to enclose the cheese completely.
- 2 To make the salsa, quarter the capsicums, remove the seeds and membranes and cook on a hot, lightly oiled barbecue grill, skin-side-down, until the skin blackens and blisters. Place in a plastic bag and leave to cool. Peel away the skin and dice the flesh. Combine with the tomato, onion, olive oil and vinegar and leave for at least 1 hour to let the flavours develop. Serve at room temperature.
- 3 Cook the patties on a hot, lightly oiled barbecue grill or flat plate for4-5 minutes each side, turning once. Serve in rolls with salad leaves and the capsicum salsa.
