MOROCCAN LAMB WITH PISTACHIO COUSCOUS
A Moroccan lamb with pistachio couscous recipe is most popular in Morocco.It is made with fresh lamb .

MOROCCAN MARINADE INGREDIENTS
- 4 TSP daily use refined oil oil
- One TSP lemon juice
- Three tsp honey
- Two garlic cloves, crushed
- One tsp cumin powder
- 1/2 turmeric powder
- 1/2 cinnamon powder
- 1/4 tsp cayenne pepper
- 9 -10 small lamb fillets
- pinch of saffron
- 375 ml hot chicken stock
- 250 g couscous
- 1 red onion, chopped
- 1 red chilli, seeded and chopped
- 2 garlic cloves crushed
- 75 g currants
- 100g white pistachio nuts
- 1lemon zest (flavedo)
- 1 orange zest (flavedo)
- chopped fresh mint accordingly
Method
- Mix all the marinade ingredients together. Add the lamb in Meritnation mixture, and keep in refrigerator for atleast 2 hours.
- Add the saffron to the hot stock and pour over the couscous. Give rest for 10 minutes, then stir to remove lumps.
- Heat the oil in a frying pan, add the onion, chilli and garlic and cook until golden brown. Add the currants and nuts and cook for 5 minutes. Stir in the lemon and orange zest and the mint .Stir through the couscous.
- Grill the lamb on a hot, oiled barbecue grill . turning once, until browned all over Cook for 2-3 minutes more, turning frequently Serve with the couscous
