MOROCCAN LAMB WITH PISTACHIO COUSCOUS


    Timing 

Preparation time: 41 minutes 

Meritnation time - two hours 

Total cooking time: 21minutes

Serves 4


MOROCCAN MARINADE INGREDIENTS 

  • 4 TSP daily use  refined oil oil
  •  One TSP lemon juice
  • Three tsp honey
  • Two  garlic cloves, crushed
  • One tsp cumin powder 
  •  1/2 turmeric powder 
  • 1/2 cinnamon powder 
  • 1/4 tsp cayenne pepper
  • 9 -10 small lamb fillets 
  •  pinch of saffron 
  • 375 ml hot chicken stock 
  • 250 g couscous
  • 1 red onion, chopped
  • 1 red chilli, seeded and chopped
  • 2  garlic cloves crushed
  • 75 g currants
  • 100g  white pistachio nuts
  • 1lemon zest (flavedo)
  • 1 orange zest (flavedo)
  • chopped fresh mint accordingly 

Method 

  •  Mix  all the marinade ingredients together. Add the lamb in Meritnation mixture, and keep in  refrigerator  for atleast 2 hours.

  • Add the saffron to the hot stock and pour over the couscous. Give rest for 10 minutes, then stir to remove lumps.
  •  Heat the oil in a frying pan, add the onion, chilli and garlic and cook until golden brown. Add the currants and nuts and cook for 5 minutes. Stir in the lemon and orange zest and the mint .Stir through the couscous.

  • Grill the lamb on a hot, oiled   barbecue grill . turning once, until browned all over Cook for 2-3 minutes more, turning frequently Serve with the couscous
