FISH WRAPPED IN BANANA LEAVES

Ingredients ( spices paste)
Onion - 1 red , (finely chopped)
Red Chillies - 3 small , (seeded and chopped)
Dried shrimp paste - one tsp
Fresh galangal - 1 cm (1/2 inch) (finely chopped)
lemon grass - 1 stem , white portion only,( finely sliced)
Almonds- 6 blanched almonds, chopped
Kaffir lime leaves, finely shredded
Sesame oil - 2 tsp
Vegetable oil -1 tsp
Soy sauce - 1tsp
One banana leaf (about 50 x 30 cm/ 20 x 12 inches)
One whole trout or silver bream (about 750 g/11/2 lb),( cleaned and scaled)
Method
- First keep the kaffir lime leaves aside. Now put all the ingredients in mixer jar. Grinder it until smooth. Add two TSP of water if needed.
- Heat the oil in pan.Cook the mixture in vegetable and sesame oil for five minutes Add soya sauce. Remove from the heat and wait for it to cool down.
- Cut a large rectangle from the banana leaf and grease the oil with brush . Score the fish several times on both sides and rub in the paste, pushing it well into the cuts.
- Place the fish on the banana leaf and fold over to make a parcel. Wrap again in foil to secure and protect. Cook over medium heat on a hot, lightly oiled barbecue grill or flat plate for 20-30 minutes, or until the flesh flakes easily when tested with a fork.
