Q. How to make fried chicken extra crispy at home like KFC?
A. The key to that signature KFC-style crunch is the double-flour method. After the chicken soaks in the buttermilk, you'll first coat it in the dry flour mix, then dip it in the egg wash with the seasonings, and finally, do a second, thorough coat in the flour mixture, rubbing it with your hands to create those flaky, crunchy bits.
Q. What is the best way to get crispy fried chicken skin?
A. To achieve the crispiest skin, make sure the oil is at the right temperature (around 325-350°F or 160-175°C) and don't overcrowd the pan. Cooking in smaller batches ensures the oil temperature doesn't drop too much, allowing the chicken to fry properly without becoming soggy.
Q. What is the secret ingredient for making fried chicken juicy and tender?
A. The secret is the buttermilk marinade. The lactic acid in the buttermilk tenderizes the chicken meat, making it incredibly moist and juicy on the inside while the outside gets perfectly crispy.
Q. What is the best type of oil for deep frying chicken?
A. Oils with a high smoke point, such as peanut oil, canola oil, or vegetable oil, are the best choices for deep frying. These oils can withstand the high temperatures required for frying without breaking down or imparting a burnt flavor.
Q. What's the difference between this fried chicken recipe and Popeyes fried chicken?
A. This recipe uses a buttermilk marinade, which is a classic Southern style. Popeyes is known for its spicy chicken, which typically includes a cayenne pepper and other Cajun spice blend in the marinade and/or the dredge, giving it a distinct fiery kick. You can easily add a similar spice blend to this recipe's marinade to get a similar flavor profile.
