LENTIL SALAD
Lentils are staple food of Indian kitchen. These are rich in protein and earthy in flavours . These are dark brown colour outside and red orange inside. Lentils soup and lentils salad are some popular recipes of plant based protein .

Ingredients
4 cups lentils ( 300 g, 10.6 oz) ( soak for an hour)
Lemon juice - 1 TSP
Onion or spring onion - 1 medium ( finely chopped)
Cloves - 3
Garlic - 3 cloves or half TSP garlic paste
Cumin seeds - half tsp
2 cloves garlic, peeled
1 fresh or dry bay leaf
Mint leaves - 3 TSP
Tomato - one medium ( finely chopped)
Ginger - thin slices 10
Oil - one tsp
Salt - according to taste
Chaat masala powder - half tsp
Red chili powder - two pinch
Green chilli - 1 ( chopped)
Water - 3 and half cup of water
Steps
Take a sauce pan add water, salt, cloves,bay leaf and lentils. Cover the pan.Bring it to boil and cook for 30 minutes or until softened. Stir in between.p
Heat the oil in frying pan, add cumin seeds, garlic, ginger and onion. Cook for one minute and remove the pan from heat.
Drain the extra water from lentils.
Add lentils in frying pan mixture and toss.
Now add all lemon juice, chaat masala, red and green chilli, and tomato . Mix well and add more salt if needed.
Serve on room temperature.
Chickpeas salad recipe
Chickpeas is also known as bangal gram and garbanzo beans. It grows in 50 countries of the world. But India is the largest producer of chickpeas. It is rich source of protein, fibre, vitamins.
Preparation time - 15 minutes
Ingredients
chickpeas two cups ( boiled)
Cucumber - one medium
Red bell pepper - one small( cut in big square pieces )
Yellow bell pepper - one small ( cut in big square pieces)
Onion - one small( cut in big square pieces)
Tomato - one medium( cut in big square pieces )
Low fat cottage cheese - 113 gram ( half cup)
Lemon juice - two TSP
Honey - 2 TSP
Chaat masala - half tsp
Five thin slices of ginger
Red chili powder - two pinch or one chopped green chilli
Mint and coriander leaves for garnishing
Salt - According to taste
Steps
Take a big deep glass bowl. Add honey, lemon juice, salt, chilli, and chaat masala powder. Mix well.
Next add boiled (extra water drained) chickpeas, red and yellow bell peppers, onion, tomato and cottage cheese. Toss three times.
Transfer in serving bowl and garnish with mint and coriander leaves. Place ginger slices on top. Ready to enjoy.
Note - soak chickpeas overnight and boil for thirty minutes or until softened.
Almond milk
Almonds are rich source of protein. United States of America is the largest producer of almonds . Almond milk is the easiest recipe to fullfill your daily needs of protein.
Take a half cup of almonds.( Soaked overnight)
Remove the peel.
Add one cup water and blend for atleast one minute. Stain in stainer into glass.
Add honey and serve on room temperature.
